April has arrived and we couldn't be happier that Spring is finally here!

This month not only marks new growth, but also shrugging and shaking off the last bits of Winter. Which means.... time for cold drinks! Iced tea and cold brew are a great way to get some flavor and vitamins in your water the good old fashioned way. 

Our favorite way to prepare white and green tea is using the cold brew method. Essentially, tea is steeping in cold water, slowly imparting it's flavor and flavonoids. Flavonoids are phytochemicals that are naturally found in any plant (fruit, vegetable etc.) that enrich your body and keep your heart healthy. Tea has more flavonoids than coffee or juice, making it a healthy choice. You can make cold brew overnight in your fridge, and enjoy it in the morning or throughout the day. 

Iced tea can be prepared with ice water (measuring out water and ice together) or with cool water and then pouring over ice cubes in a glass. If you enjoy your iced tea with milk (or mylk), we recommend adding a .5 cup less of water. 

A great sugar or honey alternative is agave nectar (especially if you're vegan). It dissolves well in colder liquids. If you prefer standard sugar for your iced drinks, prepare a simple syrup by adding equal parts sugar to water in a small saucepan and simmering until all the crystals are dissolved. You can also do this with sugar alternatives. If using honey, melt it in a small amount of warm water.

The Steeping Instructions below are meant as a guideline for you to steep your teas. If you prefer a stronger taste, we recommend adding up to .5 tsp extra of tea. Don't steep the tea for longer, as some of the teas have been timed to release the right amount of flavor and ensure no bitterness will result. If you have any questions, we're always here to help!

Fruit Tea Razzmatazz

Tasting Notes: Gorgeous and tart, this tea wakes you up from top to bottom. It's very versatile, and can be sweetened up or lightened up if the taste is too punchy. We personally loved steeping this one a bit stronger with more tea, and then sweetening it up a bit with some honey. It's SO perfect iced.

Hot Steeping instructions: 

Mug (8oz water): 2 level tsp • 212º • Steep for 5 min. 

Boil fresh water to a rapid boil. Place tea in your mug/teacup and pour hot water over the tea. Let steep 5 minutes.

Teapot (8oz water): 2.5 level tsp • 212º • Steep for 5 min. 

Boil fresh water to a rapid boil. Place tea in your teapot and pour hot water over the tea. Let steep 5 minutes.

Iced Tea Steeping instructions:  

Boil 1 cup of water (8oz) and pour over 6 level teaspoons of Fruit Tea Razzmatazz. Steep for 5 min. Remove tea or strain out concentrated tea into a new container. 

Add 1-1.5 cups of cool water (for stronger tea) or 2 cups of cool water (for lighter tea), and stir. At this point you can add in your sweetener. We added about 5 tsp of simple syrup. Pour into glasses, and top off with fresh ice cubes. Enjoy!

Ratio: 1 cup boiling water to 6 tsp of tea

 

Green Tea Houjini

Tasting Notes: Get ready to experience something different with this tea. This tea is the only Japanese tea that's roasted, as opposed to steamed. It has less caffeine content making it perfect for afternoon/evening consumption. It's so perfectly balanced and has a beautiful mouthfeel. 

Steeping instructions: 

Mug (8oz water): 1.5 level tsp • 180º • Steep for 4 min. 

Boil fresh water, pour into mug and wait 30 sec. Place tea in your mug/teacup and wet the tea by swirling or dunking. Let steep 4 minutes.

Teapot (8oz water): 1.5 level tsp • 180º • Steep for 3 min.

Boil fresh water, pour into teapot and wait 30 sec. Place tea in your teapot and wet the tea by swirling or dunking. Let steep 3 minutes.

Cold Brew Steeping instructions:  

Pour 1 cup (8oz) of cool water into a glass or container of your choice. Add 4 tsp of Green Tea Houjini. You can add the tea in a paper tea filter, infuser basket, or loose in the water. Cover and leave in your fridge for 6-8 hours. Sip slowly and enjoy!

Ratio: 1 cup cool water to 4 tsp of tea

 

Wellness Tea Stomach Soother

 

Wellness Tea Stomach Soother

flavors: fennel • peppermint

Tasting Notes: A stomach settling soothing tea with delicious peppermint and fennel flavors. This one is fantastic after a big meal, or to assist in digestion. There are fluffy bits of Slippery Elm in this tea that can either be left as is, or broken up. 

Slippery Elm: has been used for diarrhea, constipation, and IBS. Also great for skin conditions and sore throats.
Skullcap: reduces anxiety and inflammation.

Steeping Instructions:

Mug (8oz water): 1 level tsp • 205º • Steep for 6 min. 

Boil fresh water to a soft boil (not hard, rapid boil). Place tea in your mug/teacup and pour hot water over the tea. Let steep 7 minutes.

Teapot (8oz water): 1.5 level tsp • 205º • Steep for 5 min.

Boil fresh water to a soft boil (not hard, rapid boil). Pour hot water over tea in your teapot. Let steep 6 minutes.

Iced Tea Steeping instructions:  

Boil 1 cup of water (8oz) and pour over 7 level teaspoons of Wellness Tea Stomach Soother. Steep for 6 min. Remove tea (if using a tea filter or infuser basket) or strain out concentrated tea into a new container. 

Add 1-1.5 cups of cool water (for stronger tea) or 2 cups of cool water (for lighter tea), and stir. At this point you can add in your sweetener. We added about 5 tsp of simple syrup. Pour into glasses, and top off with fresh ice cubes. Enjoy!

Tasting Notes: This sinful tea is very much like a chewy caramel candy. Sometimes we need to take a break with something sweet, and this is perfect for that! The flavors really shine when prepared cold. We'll be drinking this on a sunny day any chance we get!

Mug (8oz water): 1.5 level tsp • 212º • Steep for 5 min.

Tasting Notes: This medium bodied black tea is perfect for the morning pick me up or afternoon lull. It's got a nice kick of caffeine without being too overbearing. If you've never had lychee, it's a delicious, juicy, floral fruit. This tea would be delicious with some almond or coconut milk splashed in.

 

Steeping instructions: 

Mug (8oz water): 1 level tsp • 205º • Steep for 4 min.

Boil fresh water to a soft boil (not hard, rapid boil). Place tea in your mug/teacup and pour hot water over the tea. Let steep 4 minutes. 

Teapot (8oz water): 1.5 level tsp • 205º • Steep for 3 min. 

Boil fresh water to a soft boil (not hard, rapid boil). Place tea in your teapot and pour hot water over the tea. Let steep 3 minutes.

Tasting Notes: The gorgeous, slightly earthy white tea pairs perfectly with the sweet honeydew taste in this tea. It's the perfect tea for a gorgeous sunny afternoon. We prefer this one cold as a delicious treat after a workout.

Steeping instructions: 

Mug (8oz water): 1.5 level tsp • 175º • Steep for 3 min. 

Boil fresh water, pour into mug and wait 45 min. Place tea in your mug/teacup and wet the tea by swirling or dunking. Let steep 3 minutes.

Teapot (8oz water): 2 level tsp • 175º • Steep for 2 min.

Boil fresh water, pour into teapot and wait 1 min. Place tea in your teapot and wet the tea by swirling or dunking. Let steep 2 minutes.

Cold Brew Steeping instructions:  

Pour 1 cup (8oz) of cool water into a glass or container of your choice. Add 3 tsp of White Tea Melon Melody. You can add the tea in a paper tea filter, infuser basket, or loose in the water. Cover and leave in your fridge for 6-8 hours. Sip slowly and enjoy!

Ratio: 1 cup cool water to 3 tsp of tea

   

Black Tea Vanilla + Cream

Tasting Notes: A gorgeous everyday tea to reach for. It's the perfect foundation for whatever you like in your cup of black tea. Milk and sugar please! You'll reach for this tea as your go to for iced tea (we always make a double batch of this).

Steeping instructions: 

Mug (8oz water): 1 level tsp • 205º • Steep for 4 min. 

Boil fresh water to a soft boil (not hard, rapid boil). Place tea in your mug/teacup and pour hot water over the tea. Let steep 4 minutes. 

Teapot (8oz water): 1.5 level tsp • 205º • Steep for 3 min.

Boil fresh water to a soft boil (not hard, rapid boil). Place tea in your teapot and pour hot water over the tea. Let steep 3 minutes. 

 

Iced Tea Steeping instructions:  

Boil 1 cup of water (8oz) and pour over 8 level teaspoons of Black Tea Vanilla + Cream. Steep for 4 min. Remove tea (if using a tea filter or infuser basket) or strain out concentrated tea into a new container. 

Add 1-1.5 cups of cool water, and stir. At this point you can add in your sweetener. We added about 5 tsp of simple syrup. Pour into glasses, and top off with fresh ice cubes. This tea goes really well with any type of milk, we recommend just under 1/4 cup of milk, and maybe a splash of creamer. Enjoy!

Alternatively, if you don't want to add ice cubes, you can replace the cool water with ice water. Make ice water by measuring water and ice together and letting the ice melt. Voila! 

Ratio: 1 cup boiling water to 8 tsp of tea

General Recommendations:

If you have a tea kettle with a built in thermometer you can pour hot water directly on tea leaves, without waiting.

It's recommended to use a tea filter bag or infuser that allows the leaves to float freely.

Adding more tea makes it taste stronger, not steeping the tea leaves longer.

Don't use microwave heated water, the lack of oxygen will make your tea taste flat.
